Making espresso is a cathartic, meditative, and an absolute essential activity for my life. Something so conceptually easy should never be taken for granted: coffee, pressure, heat, water, espresso. But the unscrupulous minutia that rapidly and drastically alters the shot festers the constant desire and compulsion to develop the craft. I hate it as much as I love it. That being said, the last 4 years of making coffee professionally have been the best of my life. I get to develop relationships, meet farmers, make people happy, and most of all, TASTE AMAZING COFFEE FOR MONEY. I'm jealous of myself, really. Keep drinking coffee, world. It will make you talk, think, run, and it will keep both you and I sane.
