While biking one morning across the Burnside bridge into West Portland, I had a bit of an epiphany. There I was, mashing over the quiet Willamette, the neon glow of the Made In Oregon sign as my beacon, signaling that I'm approaching our beautiful coffee bar to unlock the door and start its day. It was pitch black outside. The new season is almost suddenly changing before I expected it to! That means it's time for some different flavors on the espresso bar. Coffee is a seasonal produce, after all...
That very day I asked Kevin to find me some coffees that will welcome the approaching Autumn glory. After an intense Saturday morning cupping, we narrowed it down to 6 single origins. Then, against all logic and common sense, some fellow baristas and I stayed up late one weekday night and started pulling shots. Shot after shot. Picking apart and critiquing these coffees, looking for body, sweetness, spices, maybe notes of chocolate and marshmallow, and some sweet baked pear or even squash. Notes of Fall. What we found on that caffeinated night was a new re-assurance for our love of espresso. We were in the zone, in tune, in our craft. I think you all will enjoy what we discovered. Prometheus is not just an espresso blend, but an ongoing pursuit of something that makes us say "wow...that's amazing".
